Kaeng Run Juan (Agitated Beef Curry)

Beef, Shrimp paste chili dip, fine chopped lemongrass.
Peel the shallot and garlic, then boil it together with the beef in a pot. When the beef is well softened, put the shrimp paste chili dip into the pot. Blend it to get all the flavor of sour, salty, and sweet. When the flavor is satisfied, remove the pot from heat. Sprinkle sweet basil leaves on top. Add more lime juice if not yet sour. Served when extremely hot. Pork, chicken, or prawns may be used instead of beef.
