Kaeng Ped Sod Prik Thai Orn (Duck Curry with young green pepper)

Fresh Duck meat, dried chili, galanga, lemon grass, shallots, garlic, shrimp paste, lemon rind, roasted coriander seeds and cumin seeds, young green peppers, grated coconut, spur chilies, kaffir lime leaves, and sweet basil.
Clean duck meat then chops it in right sizes. Pound all the ingredients for making chili paste then fry the paste with coconut cream until well cooked and fragrant. Fry and mix duck meat with the cooked chili paste then put it in a pot. Add coconut milk and heat it up until boiled. Add some fish sauce until the taste is satisfied. Put in green pepper seeds, chopped spur chilies, kaffir lime leaves. Take it off the heat then sprinkled with sweet basil. It is now ready for serve.
Side dishes
Salted meat, dried snake head fish, Gourami, or dried squid.
