Ingredients
Fresh shrimps, marine crab, pork, Shiitake mushroom, grass noodle, bean sprout,
coriander leaves, pepper, and garlic.
Preparation
Pound the coriander together with
pepper and garlic. Then fried in cooking oil until fragrant. Put in minced pork,
shrimps, and marine crab. Also add cut soaked grass rice noodle and Chinese
mushroom. If the Shiitake mushroom is expensive, the Jew's ear can be used instead.
The mushroom has to be sliced in long strips then fried together with the bean
sprout. Add some fish sauce, soy sauce, and a pinch of sugar. Put the fried
mixture into a bowl, set aside. Wrap the prepared mixture with powder sheet
into cylindrical shape, then fry it until cooked. Eat Por Pia with, dipping
sauce, fresh cucumber, and lettuce.
Dipping Sauce preparation
Vinegar, sugar, and salt are main ingredients to provide sour, sweet, and salty flavor. Cut the red spur chilies and remove all seeds. Wash and finely pound them, then dissolve the paste in vinegar. Finely chop the fresh Chinese redish and ginger, then put it into the vinegar.
