Ka Pi Kua (Fried Shrimp Paste)


Ingredients
High quality shrimp paste, grated coconut, dried shrimps, crispy fish, spur chilies, dried chilies, galanga, lemon grass, shallots, garlic, wild ginger, fish sauce, and palm sugar. If not prefer crispy fish, roasted snake head fish can be a substitute.
Preparation
Finely pound every ingredient together with extra wild ginger. Add a chunk of shrimp paste, grounded dried shrimps, prepared fish meat, then pound them together. Put coconut cream into the pan together with the pounded ingredients, then simmer the mixture until it becomes thick. Blend it with salty and sweet flavor. Add whole spur chilies.

Side dish fish
Fried roasted catfish or fried snake head fish cut in pieces.
Side dish salads
All kinds of egg plants, cucumber, large cucumber, olive leaves, mango young leaves, sweet basil, leaves of a herb of genus Hydrocotyle, all other preferred salads and vegetables, especially white turmeric.
